The company, which markets the fresh bunnies in Cryovac packaging similar to bacon pack, is betting that rabbit will prove as popular as fish or lamb in the next few years. Rabbit Meat Company statistics show that rabbit is not only the highest in protein of all meats, it is also lower in cholesterol, fat, and calories. Further, unlike other meats, it contains high levels of vitamins and minerals. Also notable is the relatively low environmental impact from raising rabbits, which results in smaller overall carbon footprint compared to other meats. The price and texture make rabbit more comparable to beef or pork than fowl. The meat—all white—tastes similar to veal, consumers say. It is often also used as a substitute for chicken in recipes. You can roast, braise, bread and fry rabbit meat. It is a very versatile meat which pairs well with both intense spices and delicate flavors. Rabbits may be an accountant’s dream. They are inexpensive to raise, take very little care, and reproduce like crazy. The Market Rabbit accounts for about one-half cent of the U.S. meat dollar, compared with about 15 cents in Europe, where it is a dietary staple, noted Orion director of operations Leonard Parsons. In fact, the global rabbit meat market has been growing steadily. Currently, China has the largest volume of rabbit meat consumption. In France, rabbit is served for dinner at least once a week and rabbits are found right beside the chickens in grocery stores. Spain, Italy, the Czech Republic, Korea, and Egypt are also high consumers of rabbit meat. However, the demand for rabbit meat in North America is very low. Rabbits are popular as pets in American homes, and are often associated with the Easter bunny. Rabbit meat was popular in the U.S. before the increase in beef consumption in the 1960s. Orion is hoping to reeducate American tastes and reestablish a strong market for rabbit meat in the American marketplace. It is considering presenting “tender country-raised rabbit” in transparent packages adorned with colorful labels and illustrated recipes. The other competitors that market rabbit domestically sell it frozen in cardboard boxes.     The company also has plans to market rabbit legs, cutlets, fillets, ground rabbit, even sausages, paté, and other processed products, in much the same manner as the chicken and turkey industries have marketed their products recently.
