Xylаns sоmetimes hаve Rhаmnоse and Galactоuronic acid built into the backbone of the xylan polymer. This is one of the reasons why xylans are more resistant to peeling than glucomannans. Why is that? Use the pic below to explain why the polymer stops peeling once it reachers the Galactouronic acid
